Nutrition and fitness is my HOBBY!

Ladies and gents, wanted to let everyone know that I have gone back to work full time. Nutrition and fitness have been a passion of mine for as long as I can remember and I am so grateful I got to focus on my passion for eight years while being a stay at home mom and raising my two kids. However, the time has come to put nutrition/fitness back in “hobby” mode. In my previous life I was an IT Recruiter and that is what I am returning to…starting tomorrow!  Though I am very excited, I’m also feeling everyone’s pain of juggling fitness and full time work. I will continue posting about these topics but this time I may be asking for more advice instead of giving it. I hope you’ll stay with me and we can keep each other motivated for swimsuit season!

Best Chicken Salad Ever (and fat loss friendly!)

Once again Pinterest has changed my life. Well, not really, but it has forever  changed the way I make chicken salad. Credit for this recipe goes to the blog Becoming Betty. So many things make this recipe great but a nice ripe avocado and fresh green onion made this really stand out. Good timing, too, since I was becoming very tired of my standard chicken salad with grapes. Boring!

Ingredients:
Baked Chicken Breast (I had baked the chicken with Mrs. Dash Lemon/Pepper seasoning)
Avocado
Canola Mayo
Green Onion, chopped
Lime Juice
Salt/Pepper (if you wish)

I’m not putting specific amounts because its really all “to taste”. I personally used 10 ounces of chicken cubed, 1 medium avocado, 1T mayo (and it didn’t even need that much), about 2tsp lime juice and I left out salt/pepper since I baked the chicken in seasoning.

As always, I added up the macros for the amounts I used so this can give you a guesstimate when you decide if it’s for you or not. And like the nagging mother I am, I feel the need to remind you not to fear the fat!! Fat is good.
Entire batch: cal 625 / fat 36 / carb 15 / protein 62/5
Half (which is what I ate): cal 312.5 / fat 18 / carb 7.5 / pro 31.25

I ate half along with cucumber slices and I was very full and very happy. If you make it let me know how you like it!

My ‘Instead’ Jar

I had this idea as I was pondering giving into a craving for a Five Guys cheeseburger (warningif you’ve never had one don’t ever go because you’ll never stop!) at the very same time I was pondering getting new pants from Lululemon (my previous warning applies here too). And besides being awesome, both can take a chunk out of your wallet. And I know, having these two thoughts at the same time makes no logical sense but such is me. Anyway, it hit me, why not skip Five Guys because I want to actually look good in expensive Lululemon pants. I’ll take the money I was going to spend for the best burger in the world and put it in a jar to save up for the best pants in the world. I set out to make an ‘Instead Jar’. Whenever I have a guilty craving I will pause, not give in, and put the money I would have spent into my jar to save up for something better instead. I needed something that stuck out and called to me wanting to be filled with dollars so I used this. Nothing says healthy choices like a margarita pitcher!  I’m full of contradictions.

See, there is already $5 in there and it’s only the first day. It’s possible that seeing this brightly colored pitcher will cause me to make better decisions and frankly, I’m looking forward to seeing just how full I can get that pitcher. I so enjoy competitions with myself. I’ll keep you updated on the cash…if you make of one your own let me know and post it on Facebook. I’d love to see how much money we can all come up with!! (And I’m even thinking Contest #3 will be posted about this as well.)

Recipe Time – Deviled Eggs Guacamole Style!

Check out this deliciousness! This will be on my main menu tomorrow for sure! What could be better than my two favorite foods all put together nicely to travel with me on errands! Lots of protein and good fats. Yum, yum.

This recipe originated from Michelle Hansen who is a beautiful participant in Jamie Eason’s 12-Week Trainer.

Ingredients

1 small hass avocado
1/4 cup chopped tomato
1/4 cup chopped onion
Finely chopped jalapeño to taste
1 tsp chopped cilantro (could have used more)
1 tsp minced garlic
Dash salt and pepper
Squeeze of lime (I used lemon) juice
And then just peel, cut, remove yolk, and fill egg whites!

For 5 egg whites and the whole guac concoction it is:
Calories: 259 / Fat: 15g / Carbs: 8g
